I finally made my version of Grilled Vegetables on Focaccia of Cafe Mary Grace.

It was easy peasy… it just need chicken breast, focaccia, eggplant and zucchini.

I have never eaten or made a sandwich with eggplant or least zucchini, I made once with avocado and it was good.   Most of the times if I want vegetable on my sandwich I put on lettuce and/or tomatoes.

When I saw this on their menu I immediately ordered one out of curiosity.  I was surprised that it tastes really good, I mean really, really good (i think my friend Janiz will agree).

So here it is my very own Grilled Vegetables on Focaccia.

The vegetables must be sliced very thinly.

I bought focaccia in French Baker but you can also find it SM Hypermarket and Landmark.

Foccacia is an italian bread with herbs and olive oil.

I remember when I’m about to place my orders I have some reservation if I’m going to read it aloud to the waiter or just point it out because I’m unsure how to pronounce the word focaccia and hell yeh, I don’t know what it was. Hahahaha… What I’m only only sure of was it’s part of what I’m going to eat.  I thought to myself, what’s wrong if I pronounced it wrong maybe the waiter will correct me and he will be happy to describe to me what is a focaccia.  Besides, who cares if Janiz hear me pronouncing it wrong… if she knows how to pronounce it she will gladly me teach me how to and I wouldn’t be embarrassed at all.  I learned that when you’re with a friend you can let your guards off and be the the person that you really are. So I went ahead and said FOCASHIA.  The waiter repeated our orders and his pronunciation of focaccia was close to mine so I didn’t mind and the thought of wrong pronunciation skipped my mind.

When I got home I looked it up in Merriam Webster online and it turned out that it was pronounced as \fō-ˈkä-ch(ē-)ə\ or fow.ka.tyia, not bad a bit close eh?

Cafe Mary Grace’s Grilled Vegetables on Focaccia a la Joy


1 Focaccia bread

1 pound boneless chicken breasts (about 2 breast halves) seasoned with salt and pepper

1 eggplant, thinly sliced

1 zucchini, thinly sliced


Assemble the sandwiches -focaccia bottom, chicken, slices of eggplant and zucchini top focaccia.
